No, burgers as chewy as leather is not what we mean. But look at MycoWorks, using the genetic material that nature uses to make mushrooms, and re-purposing as a substitute for leather. Petri’s got Modern Synthesis chasing the same target of leather substitution, and Modern Meadow’s working on this too. But we were struck by the malleability, the color, the texture that mycelium can deliver. It’s not leather but it might not only be a great substitute, it might be even better. One day, cows might be wearing leather jackets made from shrooms, and judging from this slide from INDIE BIO, the day may not be long in coming.
